Preheat oven to 350 F.
Prepare a 9 x 13-inch baking dish by lining the bottom with parchment paper and spraying the sides with cooking spray.
Sift together flour and baking soda, set aside.
With a stand mixer fitted with a paddle attachment, or by hand, mix eggs and sugar.
Add flour/baking powder to egg and sugar mixture, then add in dates and nuts.
Bake at 350 F (175 C) for 20 minutes or until just lightly browned. Allow to cool slightly before cutting into bars.
Sprinkle bars generously with powdered sugar. Get ready to make seconds….
